I’m Back!!!!!

Sorry for the long break in posts. My best friend was home from Korea for a few weeks. She just left for Chine to teach english for a year. She has been gone for a couple weeks and I haven’t heard anything from her yet.

School also started. I just started my last year of nursing school. I can finally count down the days to graduation. I feel like I have been in school forever!!!! Since nursing school is very time consuming I’m not sure how often I will post. I promise to try to post as much as possible.

I recently signed up for a couple 5Ks. Currently I cant run for longer then a couple minutes. I started the 8 week beginners 5K training schedule from runners world. My first 5K isn’t until May 10th so I should be able to run a 5K by then. For me running is the best way to get in shape and stay in shape. I will keep you posted on my running adventure.

As for cooking….

This morning I made some Whole Wheat Banana Pancakes with Strawberry Cream. They were really easy to make. I have a rule when I try new recipes, always stick to the recipe the first time. The pancakes were pretty good, but I would make a couple changes next time.

To make the pancakes you combine 1 cup wheat flour, 1 cup milk, 1 egg, 1 tsp cinnamon and 1 mashed banana.

In the future I want to try using almond milk instead of milk. I will also add a little more milk then 1 cup. The pancakes were a little to thick and chewy.

For the strawberry cream I just whipped some whipping cream until it was whip cream consistency then I folded in some blended strawberries. It was delicious!!!! Not super healthy but thats why I made super healthy pancakes.

Venison Bacon

Before talking about todays breakfast lets recap yesterday.

Lunch

Lunch was definitely the highlight meal yesterday.

Black Bean Burger and Sweet Potato Fries

I was at my parents house dropping off Maisy and I needed to find something quick to whip up for lunch before I left for work. I was checking out the freezer and I saw the morningstar black bean burgers and the sweet potato fries. I decided it would be the perfect lunch. I threw the burger and fries into the oven.

When I flipped the burger I added a piece of provolone cheese to melt on top. My mom didn’t have any buns or bread but I found a flatbread. I cut it in half and topped my burger with tomato and lettuce. I dipped both my burger and fries in BBQ sauce. It was so good and filling.

After eating I was off to work. Work was really busy. It is respiratory and flu season so the hospital is crazy busy. The good thing about being busy is my shift goes by really fast and I get some walking in!

I forgot to capture my dinner since I was at work but I brought left overs. About a week ago I made healthy chicken parmesan with noodles and homemade tomato sauce. In a future post I will share my delicious tomato sauce recipe. It is so much better then jarred pasta sauce. With my pasta I had a side of steamed broccoli.

Breakfast

Now onto this mornings amazing breakfast. Maisy woke me up at 8:30am to go outside. After taking her out I was hunger and wanted something besides leftover Egg Muffins. I remembered that I had venison bacon in my fridge and decided a breakfast sandwich was needed.

First I fried some onion. When onions are fried they turn sweet. I am a true onion lover.

While my onions were frying I made myself some peach tea with our new soda stream. IMG_1791

I do have to say that I love our soda stream. It makes delicious pop. I love that the regular pop is even lower cal and sugar. You can add as much flavoring as you want. So far I have not be disappointed.

Once the onions were done I heated up the venison bacon. IMG_1792

My family hunts so we always have lots of venison in the winter time. This year I was very happy to hear that we got venison bacon. It has a slight taste of regular bacon but it is super thick cut. It also has almost no fat. It is a nice healthy alternative to regular bacon.

Once the bacon was done I fried up two eggs and toasted two slices of whole wheat bread.

Oh man was this a delicious breakfast. I love when the yolks aren’t fully cooked. It makes something good to dip my sandwich into. I did not add cheese to this and I really did not miss it. The yolk helped me forgot about the missing cheese.

Such a great way to start my day 🙂

Body Step

My friends and I decided to go to Body Step this morning. Before going to the class I new I needed a little fuel. I had two Egg Muffins before I left.

I knew that Body Step was going to be hard but I didn’t realize how hard. It was an amazing workout!! It is a step aerobics class and man was I sweating. I’m pretty sure my whole shirt was drenched. I can’t wait to do it again sometime.

When I got home from working out I needed some protein. I got out my blender and put 1/2c unsweetend almond milk, 1 container vanilla greek yogurt, 1c frozen strawberries/bananas and 1 scoop chocolate protein powder in it. I blended it up and it was super thick and creamy. It was almost like eating a frosty 🙂

Yoga!!!

This afternoon I went into school to spend some time in the lab. I went over some skills that I have previously learned in order to get ready for the upcoming semester. I start school on Feb 4th. I’m excited to start because it is my second to last semester until I graduate.

Dinner

After going to the lab I went home for a quick dinner before heading to the gym. IMG_0767

 

I had some yummy chicken salad left over so I put it into a wrap, added some zinger pickle chips and made a yummy spinach salad with honey cinnamon almonds, feta, craisins and homemade balsamic dressing. It was a great dinner!

Workout

I went to the gym and opted for 40 minutes on the elliptical before taking a yoga class. I was not to excited for yoga, I took a class a long time ago and it was not fun. I thought it was super slow and boring. The class that I took tonight was not boring at all!! It was so much fun. I was actually sweating and my muscles were aching. I can’t believe I’m going to say this but I am going to take a yoga class again.

Post Workout Snack

After working out I needed a little protein boost. I had to have my favorite smoothie. About a week ago my favorite blogger posted a recipe for a strawberry cheesecake smoothie. The Beginning

The Challenge

I am challenging myself to create a healthy lifestyle! I love to cook, I make recipes up and I also follow recipes. I also love photography. I will challenge myself to capture my meals in photos and post them to this blog. Years ago before college I used to love exercise. I am challenging myself to love exercise again. I have joined a gym and I am going to go! I really want to eat healthy, exercise and enjoy my favorite hobby photography!

Breakfast

Part of breakfast today was created based on a recipe I found on pinterest. The other day I made Egg Muffins. I followed the recipe that I found but added venison bacon, canadian bacon, turkey sausage and red pepper in addition to what the recipe calls for. They turned out delicious. I put the leftover muffins in the fridge and I just warmed one up this morning in the microwave for 20 seconds. It is a great on the go breakfast. Image

I also had a Blueberry Bagel Thin with low fat strawberry cream cheese. It was a wonderful breakfast. 

Lunch

Lunch was inspired by my love for quesadillas. Image

While I was eating my lunch that was when I decided that I needed to take a picture and post it somewhere. 

When I make quesadillas I like to start with a healthy whole wheat low carb tortilla. I try to find a tortilla that has no more then 80 calories. I found some delicious low cal tortillas at Target! I topped my tortilla with a little shredded low fat mexican blend cheese, taco meat (I had left over from making tacos a few days ago), chopped red pepper and onion. I heat my quesadilla up in a frying pan that was sprayed with nonstick spray. I like to try to use nonstick spray as a substitute for butter. It works great when making quesadillas. Once my quesadilla was done I topped it with a thin layer of low fat sour cream, chopped spinach, diced tomato and taco sauce. It was so delicious and filling.
